You don’t have to be thin to be healthy. You don’t have to be thin to be beautiful. You also don’t have to be thin to take great care of your body, express your personal style and have great relationships with great sex.  You are one of a kind, and worth taking care of.  When life hands you curves, embrace them.  It’s my daily mission to live my life as wife, mother, friend, (and more!)  with abundant love, exceptional health, plenty of humor,  an expression of personal style and heaps of acceptance.   1. Hello! I came across your blog and have fallen in love with it! I am trying to adapt the recipes you make because its only me and my hubby. Most of the time it’s just me because he goes on long work trips. It’s hard to want to cook for one. Have you ever felt that way? I have done well in my journey of getting healthy, I’ve lost about 80 lbs with 50 more to go. Hoping eating some of the things you make will help!

    • I’m so glad you found my little spot on the web. 🙂 I do cook large portions, yes, so just cut what I do in half. Whatever is leftover is great for lunch the next day. 😉 Most everything I make freezes really well too. 🙂 It’s so hard when the hubs is away. I really, really hate it. Cooking for myself (which rarely happens with three kids, LOL) usually looks like a smoothie. It is rare that I will fire up the oven/stove just for myself. You are doing a great job!! I love that you said “getting healthy” and not “losing weight” or “getting thin”…health is its own journey that often comes with weight loss…but the root issue (health) needs to be the priority. 🙂 Keep up the good work!

      • Your hubby travels a lot too? My husband is in sales and pretty much gone 4 days a week. :/ I also hate it, wish he could work from home, but duty calls! Lol. I’m not sure how you do everything! Homeschooling, eating healthy, and a super informative blog. I feel like there is never enough time in the day. I hope when I have kids I am better with timing!!! 😉 I added you on Facebook too, I think. I just got a Facebook, so still learning! Looking forward to many more recipes. Thank you for telling me about freezing and cutting in half! Hopefully I will gain a friend out of you throughout my journey,I need all the encouragement I can get!!!
